A warm & dry summer followed with harvest starting on the 15th of September & good phenolic maturity and ripeness was achieved. Some light rainfall in late September was welcomed and a slight drop in temperature meant good freshness and acidity was maintained.
Pneumatic pressing , cool fermentation in stainless steel then aged for 6 months on lees in tank.
